Oven-Baked Yellow Rice for 100

Feeding a crowd of 100 doesn’t mean you have to babysit a massive pot on the stove. This oven-baked yellow rice is the ultimate hands-off side dish, perfectly scaled to round out a massive taco bar or fiesta dinner. By letting the oven do the heavy lifting, you get perfectly seasoned rice every single time—without the stress of burning the bottom of the pan.

Why this recipe works

The thing about cooking large quantities of food, like 5- or 10-pounds of rice, is that large volumes of food often do not cook the same as smaller volumes. Rice is a good example. By baking in the oven, we ensure even cooking and no burning.

This recipe works just the same as my plain oven-baked rice. And by using yellow rice that comes seasoned, we make our lives even easier!

About the ingredients

See the recipe card below for full details, but the only ingredients here are the yellow rice and butter. The butter is necessary to keep the rice from getting too sticky.

Otherwise, we just add boiling water, cover pans tightly with foil, and bake.

FAQs

Can yellow rice be baked in advance?

Yes, but not far in advance. This is not a recipe that can be made a day in advance because, unfortunately, rice is not that forgiving. But you can make this an hour or two in advance and keep warm in a very low oven.

Is yellow rice gluten-free?

Always double check the packaging, but the yellow rice I cook is gluten-free. The link is in the recipe card.

Equipment

Ingredients

  • 1 ½ cups butter divided (3 sticks)
  • 160 oz yellow rice divided (10 lbs)
  • 40 cups water divided

Instructions

  • Heat oven to 350℉ degrees.
  • Divide the rice between 3 hotel pans. Use your hands or a spoon to break up clumps of seasoning.
  • If making less than 75 servings, reduce to 2 pans instead of 3.
  • Dot each pan of rice with a stick of butter, cut into pieces.
  • Bring 13-⅓ cups water to a boil. Carefully pour boiling water over the rice and butter in one pan.
  • The amount of boiling water added is 4 cups per pound of rice in the pan.
  • Cover pan tightly with foil and put in a 350℉-degree oven.
  • Repeat steps 4 and 5 for the remaining 2 pans of rice.
  • Bake each pan 30-40 minutes until rice is tender. Fluff rice: use a large spoon to break up the rice, then fork to fluff.
  • Keep cooked rice warm until serving covered in a 150℉-degree oven.
