Heat oven to 350℉ degrees.
Divide the rice between 3 hotel pans. Use your hands or a spoon to break up clumps of seasoning.
If making less than 75 servings, reduce to 2 pans instead of 3.
Dot each pan of rice with a stick of butter, cut into pieces.
Bring 13-⅓ cups water to a boil. Carefully pour boiling water over the rice and butter in one pan.
The amount of boiling water added is 4 cups per pound of rice in the pan.
Cover pan tightly with foil and put in a 350℉-degree oven.
Repeat steps 4 and 5 for the remaining 2 pans of rice.
Bake each pan 30-40 minutes until rice is tender. Fluff rice: use a large spoon to break up the rice, then fork to fluff.
Keep cooked rice warm until serving covered in a 150℉-degree oven.
