What makes this recipe special

Delicious and elegant, garlic feta phyllo bites are worthy of your most special occasions, and I don’t make statements like that lightly.

A couple years ago, I catered a wedding, and the couple wanted a “high tea” with all finger foods. Sounds doable, right? Nope: making finger foods for 80 people – for a wedding – was the most stressful time I have ever cooked because I cut NO corners. But it was also a singular moment in me, pushing my abilities to cook for a crowd.

With my lessons learned, I now have recipes like my Spinach Artichoke Dip Mini Filo Quiches, Chipotle Cranberry Sausage Balls, and these Garlic Feta Phyllo Bites to let me make many (and I do mean MANY) finger food nibbles easily for so many people.

Which brings me to my point: this recipe works because it uses just a couple ingredients for a super easy filling and cooks quickly in easy store-bought phyllo shells. Also, these bites are just as good served at room temperature. I am incredibly proud of this little recipe and just how tasty these fancy bites are.

About the ingredients

Find Athens mini phyllo shells in the grocery freezer section for desserts. They are also available at Walmart or through Amazon. When I have needed many (like 10+ boxes), I have had to go to multiple locations because stores may not stock as many boxes as I needed.

Find Alouette garlic and herb cheese with the fancy cheeses, usually near the deli section. This is a popular item and I never have difficulty finding it. It is also available at Walmart and, oddly enough, also available through Amazon.

The rest of the ingredients are straightforward: feta cheese, paprika, and chives. Easy peasy stuff.

FAQs

Is there a substitute for the Alouette cheese?

I would love to say that Boursin cheese (one of my literal favorite ingredients in life) or chive and onion cream cheese can be substitutes for the Alouette cheese, but, alas, this recipe works because of the soft, garlicky Alouette specifically for both flavor and consistency. If unavailable, then I recommend my Spinach Artichoke Dip Mini Filo Quiches instead, which is a similar recipe.

Can these phyllo bites be cooked in advance and reheated?

These bites are as good served at room temperature, so I do not recommend reheating as I would not want to risk drying them out.

Ingredients

Instructions

  • Heat oven to 350℉.
  • Line a bake sheet with parchment paper (this is optional, but it keeps the phyllo cups from moving around).
  • Remove the phyllo shells from the packaging and place onto the bake sheet.
  • In a bowl, combine the Alouette cheese, feta cheese, and egg.
  • Spoon the cheese filling into the phyllo shells. Each shell will get ~1 teaspoon (heaping) of filling.
  • Bake phyllo bites at 350℉ for 15 minutes or until filling is set.
  • Garnish with a dusting of paprika and sprinkling of fresh chives. Serve warm or at room temperature.
